Mechanism of action

Cellulase mainly consists of exonuclease β-glucanase, endoonuclease β-glucanase and β-glucosidase, and xylanase with high activity. The mechanism of action is that it acts on β-1, 4 bonds from the inside of the molecule to degrade cellulose, and generates cellobiose from the non-reducing terminal β-1, 4 bonds of fibrdextrin, and then hydrolyzes it into glucose.

Field of Application

1. Plant extraction
Cellulase can be used in plant extraction and processing by decompressing plant cell wall and dissolving intracellular substances. When used in fruit and vegetable juice processing, the juice yield and clarity can be improved. Compared with the traditional method, enzymatic extraction has the advantages of low temperature, high efficiency and no pollution.
2. Juice processing
At present, the juice processing industry is faced with the problems of low pulp juice yield, long time consuming, cloudy juice, high viscosity, easy to precipitate and so on. Cellulase can decompose the plant cell wall, improve the juice out speed and juice out rate, and make the cloudy juice more clear.
3. Soy sauce brewing
Adding cellulase in the brewing process of soy sauce can make the cell wall of soy raw materials soften, expand and destroy, and release the proteins and carbohydrates trapped in the cells, which can not only improve the concentration of soy sauce, improve the quality of soy sauce, but also shorten the production cycle and improve the productivity.
4. Brewing industry
The addition of vitaminase in wine fermentation can significantly increase the liquor yield and raw material utilization, reduce the viscosity of solution, and shorten the fermentation time. Cellulase can decompose plant cell wall and produce glucose for yeast to use. At the same time, it is conducive to the release and utilization of starch and improve the yield of wine.
5. Feed processing
Common livestock and poultry feeds, such as grains, beans, wheat and processing by-products, contain a large amount of cellulose. In addition to ruminants can use some of the rumen microorganisms, other animals such as pigs, chickens and other single-stomach animals can not use cellulose. Adding cellulase to feed can effectively improve the nutritional value of feed and promote the weight gain of livestock and poultry.
